It is a legal requirement that food businesses produce food that is safe to eat and will not cause harm, illness or injury to their customers ! It is a proven fact that food allergies and intolerances are getting worse year on year and as a direct result of this, The Food Information Regulations were introduced in 2014. The Level 1 Allergen Awareness course is the ideal low cost course that will give all general staff a reasonably comprehensive knowledge of how they can contribute to the overall safety of the food business in regard to protecting the customer. Ideal for all general staff within the food operation from front of house staff and general kitchen staff through to the kitchen porter.

  • Explaining the differences between food allergies, food intolerance and coeliac disease, recognising allergic reactions, the symptoms and the first aid measures for anaphylaxis including the use of an Epipen
  • Looking in detail at the 14 main food types that cause the majority of allergenic problems in food
  • Looking at the journey of food from supply and delivery through to serving food and looking at simple practical control measures that can be implemented to prevent and control potential allergenic problems
  • A simple test at the conclusion of the course to confirm understanding
